Meet our team

Giovanni’s Bistro is a family owned restaurant which treasures the atmosphere just as much as the dining menu. We assembled a strong team of professionals, all of whom aspire to constantly excel and step it up!

Bob and Nadine Tokash are at the heart of everything we do here at the Giovanni’s Bistro.

The amazing team they put together has been assembled from numerous, complimentary backgrounds. Chef Jorge Calvo has been studying and working in the culinary arts all over North Jersey while Greg Gibbs, our manager and sommelier, has a more local experience in New York and New Jersey restaurants.

These differences help them to work incredibly efficiently as a dynamic team.

They compliment each other’s experiences and skills. Together in collaboration they have created our unique and diverse menu.

We are proud to recognize this menu as a truly modern take on food. A menu where there are dishes from different countries mixed up and adapted to an American contemporary setting.

All in all, we very much owe Giovanni’s team diversity to the teamwork we have here. These are the ingredients that make us the best!

General Manager, Maitre d' and Sommelier

Gregory Gibbs a longtime restaurateur, wine and catering expert and a New Jersey native. From humble begins, Greg is the thrid youngest of nine children. After a short stint in southern California where he was the beverage manager for the prestigious Marriott Desert Spring Resort he returned home to his beloved NJ and started as General Manager of the wonderful local eatery, Rosina’s. He is also a Sommeliers who most recently served as Food & Beverage Director and Maitre d’ Hotel at Hamilton Farm Golf Club in Peapack-Gladstone. Where he became one of New Jersey’s most respected Service experts where his service style of “Fine Friendly Dining” was adopted by some of the top local restaurants and clubs. He has consulted with Morris County College and East Strousburg on curriculum for their Hospitality Programs. In addition he has conducted more than 1,000 wine dinners/pairing throughout the metropolitan New York/ New Jersey area he believes wine pairing should be be a fun, educational, and  does not have to be exclusive. Greg is looking forward to the upcoming launch of Giovanni’s Bistro’s monthly wine dinners.

Greg is also excited to launch Giovanni’s Bistro Bar and Caterings, catering service, which will support all corporate dining, meetings, pickups and fine dining settings. Every Giovanni’s Bistro Catering menu will be customized to the client’s needs and budget.
