General Manager, Maitre d' and Sommelier
Greg Gibbs has a long career as a highly respected restaurateur, with an outstanding reputation as a wine, service and catering expert. Born in New Jersey, Greg is third youngest of nine children, which probably helped master his skills in service.
He served a short stint in Southern California, as beverage manager for the prestigious Marriott Desert Spring Resort, before returning home to his beloved New Jersey. He accepted the position as General Manager of the acclaimed local eatery Rosina’s.
Attaining the status of Sommeliers during his tenure as Food & Beverage Director and Maitre d’Hotel at Hamilton Farm Golf Club in Peapack-Gladstone, his reputation began to grow. He quickly became one of New Jersey’s most respected service expert, with a service style of “Fine Friendly Dining” which as adopted by many of the top local restaurants and clubs.
He has consulted with Morris County College and East Stroudsburg on curriculum for their Hospitality Programs. Greg has conducted more than 1,000 wine dinners/pairing throughout the metropolitan New York/ New Jersey area. He believes wine pairing should be fun, educational, and exclusive.

Giovanni’s Bistro is excited to launch their fine dining and catering service, which will support all corporate dining, meetings and pickups. Every Giovanni’s Bistro catering menu will be customized to the client’s needs and budget.
